As hard as it is to believe, there are people out there in the world that are not desert fans. (gasp right?) Not that I judge them, everyone is entitled to their own opinion and taste. But when it comes down to making a cake for someone who is not the biggest fan of icing, it can be a bit difficult.
I came across this problem when making a birthday cake for my father and this is what I came up with. My father is an person who enjoys sweet treats but not overly sweet things. Which is why I knew that making him a simple pound cake was the way to go. He is one those people who loves a sweet pound cake with a perfect cup of tea, which is why this cake was perfect for him.
This cake was originally just supposed to have a just a light layer of icing on the top, but we had leftover macaroons (which I did not make but bought from Costco) I added them in last minute because I felt like that cake was missing something and the macaroons helped to fill that void.
