No-Bake Fudge Bars

This chewy delicious fudge is actually one of my favorite "last minute" dessert because of how quick and easy it can be made. These fudge bars are also perfect for anyone who has severe allergies because it only contains 4 simple ingredients.
To be honest, I don't remember exactly how I came across this fudge recipe. I just remember being at a family party many years ago, trying these fudge bars and immediately falling in love with them. I asked the person who made them and they gave me this extremely simple recipe.
When I first tried to make this recipe I was a bit skeptical because this recipe seemed too easy and it felt like I was missing something. But after making my first batch, I realized how amazing and addicting these fudge bars were. Now I know that I have to make more than just one batch when I go to a party because everyone loves them!

This fudge can be made either on the stove OR in the microwave. I prefer to make it on the stove because it is easier to watch and stir, but it can be made exactly the same in the microwave. If making in a microwave, make sure to heat in 30 seconds intervals and stir for about 30 seconds using a spatula or knife in between heating to avoid burning the fudge.
Another reason I love this recipe so much is the fact that it can be made in a matter of a few minutes (not including the freezing part) and can be kept in the freezer for quite a long time (not that it would last THAT long). The only thing about the recipe is that it requires at least 90% of your concentration. Since it is made so quick, if you leave the batter alone without stirring, it can burn or clump and ultimately ruin it. But do not worry, if you follow this recipe and keep an eye on the pot, it can turn into a mouthwatering soft fudge.
For this recipe, it does not matter if you use 1/2 cup butter or 1/2 cup margarine. Personally I like using butter but overall it does not matter. The first step is to melt the butter (or margarine) in a medium sized bowl or saucepan, if melting in the microwave remember to use a microwave safe bowl. Melt the butter (or margarine) down till it is oily but DO NOT boil the butter, you just want it melted to a liquid. As soon as the butter is all melted down, pour in the chocolate chips and butterscotch chips (As seen in the picture below). Remember to keep mixing every 30 seconds, regardless if it is made over a stove or in the microwave.

Continuously mixing the batter allows it to melt faster and also avoids burns or clumps in the batter. It usually takes me about 2 - 5 minutes with continuous mixing. As soon as all the chips are melted and well incorporated into the mix, pour the marshmallows into the bowl/pan. If you are unable to find mini marshmallows, you can use regular sized marshmallows but cut them into pieces. The smaller the pieces, the easier to melt into the batter (As seen in the picture below). As soon as the marshmallows are half melted, remove from heat (or stop microwaving) and just stir the mix until the marshmallows are completely incorporated.

Once completely mixed, carefully pour the batter into a greased brownie pan or a shallow baking pan. It is important to properly grease the pan because it makes cutting the fudge squares a lot easier. Use a spatula to smooth over the top and place in the fridge or freezer to cool down. You can serve them a few hours after making them, but for best results, let it cool overnight and then cut them before serving. MATERIALS:
1 cup chocolate chips
1 cup butterscotch chips
3 cups mini marshmallows
1/2 cup butter or margarine
INSTRUCTIONS:
In a medium size bowl, melt both kinds of chips and the butter/margarine, continuously mixing to avoid burning and clumping
Melt until completely liquid, then stir in mini marshmallows until they half melted
Grease a brownie pan, pour the mix and smooth over with a spoon
Place in the fridge or freezer for a few hours to harden
Cut into squares or small slices before serving
